Carrots are an excellent source of antioxidant compounds, and the richest vegetable source of the pro-vitamin A carotenes. So as Carrots are very rich in carotenoids, this could have numerous benefits on simply munching on some carrots while browsing your net.
So the benefits that were told to me by numerous sites where: it may be beneficial to your blood sugar regulation, beta-carotene helps to protect vision-especially night vision (as beta-carotene is converted to Vitamin A in the liver, it then travels to the retina where is transformed again but now to rhodopsin --a purple pigment necessary for night-vision), it also helps with cancer.

A recent National Cancer Institute study found lung cancer occurence was higher in men whose diets did not supply a healthy intake of alpha-carotene.
A few ideas to simply enjoy the wonderful carrots are: shredding raw carrots make a great addition over a nice salad, for a simple,quick and nutrious either a hot or cold soup, with simply some purE carrots and potatoes and just simply do a little tossed it up in a blender or food processor add some herbs/and spices to add to the taste and voila! yummmy soup time! or maybe need something to quench your thirst? Combine freshly squeezed carrot juice with soymilk and bananas to make a nutrient-dense breakfast shake! Or maybe just simply do the old carrots with dip!
Just cause its good for you, you still have to eat it in moderation. Eating or juicing high amounts of foods rich in carotene, like carrots, may over tax the body's ability to convert these foods to vitamin A.
How do you know if the carrots you've selected are good? Carrot roots should be firm, smooth, relatively straight and bright in color. The deeper the orange-color, the more beta-carotene is present in the carrot.
Carrots are hardy vegetables that will keep longer than many others if stored properly. The trick to preserving the freshness of carrot roots is to minimize the amount of moisture they lose. So do properly store wrap them tightly in a plastic bag in the coolest part of you fridge, they should be able to keep up to two weeks like this.
